In theory, it will detect if the fob is inside the car vs outside, but these systems are not that precise and get it wrong sometimes.

AFAIK (for my 2015, at least as I have it configured), as was already mentioned, there's only one way to fully lock a Gen 5 Outback with keyless ignition while its running, and that is to first lock all doors with the switch, then manually unlock the the driver's door, flipping it back to lock as you exit the vehicle.
